Pizza is easily one of our favorite meals and something we often crave—but the problem is, it isn’t the healthiest option. So, when we found a similar recipe for air-fryer pizza pockets and tweaked it to make it our own, we were shocked at the delicious results!

Air fryer pizza pockets are healthier than regular pizza, with a fraction of the calories, making them an easy way to scratch that pizza craving! While you can stuff them with anything you want, we stuffed ours with veggies to make them nutritional.

Whether you are vegetarian, vegan, or dairy-free, you can tweak this recipe to make it suit your diet. The only exception is gluten-free, as we can’t find a way to make these work without gluten, sadly!

How to Make Air Fryer Pizza Pockets (Step-by-Step)

Dice your mushrooms, onions, and bell peppers. You can also buy these items pre-diced at most grocery stores.

Put the diced veggies in a plastic bowl and add the cheese and seasonings. Use your hands or a wooden spatula to gently mix. Set aside.

In a small bowl, mix 1 tablespoon flour with 2 tablespoons water to make a paste. Feel free to add a bit more water or flour as needed until the consistency is sticky.

Cut the large tortillas in half. Take one half of a tortilla a fold it in a cone shape. Use the flour and water mixture to “glue” the end.

Gently fill with the cheese and veggie mixture, but don’t overdo it. Leave about 1 inch at the top so you can close it.

Brush the “glue” over the exposed edge before pinching it shut. You can also use a kitchen crimping tool if you have one.

Turn your Air fryer to 400°F and place 2-3 pastries into the fryer. Fry for 3 minutes.

After 3 minutes, use a rubber spatula to gently flip the pastries. Once flipped, cook for another 3 minutes. While the pockets are cooking, microwave your marinara sauce for 1-2 minutes if you want it warm. You can also serve it cold. (I added extra spices to our marinara sauce. This is optional)

When the air fryer is finished, your pizza pockets are done! Use tongs to remove them from the air fryer and allow them to cool for 2-3 minutes before dipping them in the marinara and taking a bite!

Variations of Air Fryer Pizza Pockets

We used a mixture of veggies to keep these healthy and vegetarian. You can add some cooked ground beef or chicken, but ensure you keep some vegetables; otherwise, this recipe isn’t very nutritious.

You also can skip the spices if you are sensitive to spice! Personally, we find the pizza pockets boring without them.

Tips for Air Fryer Pizza Pockets

  • Add extra cheese: Beyond the flour and water glue, if you find your pockets aren’t staying closed, keep some cheese aside and add it to the top. When it melts it will help with adhesion.
  • Get grandkids to help: This is a super fun recipe for all ages. If you aren’t sure about folding and pressing the pockets on your own, wait until your grandkids are present to help with this recipe.
  • Cut everything very small: This recipe only works if the mushrooms, onions, and peppers are really small. Buy the items pre-diced if you struggle with using a knife.

What to Serve With Air Fryer Pizza Pockets

We usually eat these as a meal on their own (they are quite filling!), but you can also serve them with a green salad or a steamed green vegetable like broccoli.

How to Store Leftover Air Fryer Pizza Pockets

Unfortunately, this recipe doesn’t save well. We recommend only making the Air Fryer pizza pockets you can consume in a single sitting.

**If you have extra veggie and cheese mixture, this can be saved for up to 3 days in the fridge; just ensure you make the flour “glue” fresh every time!
