Easy Recipes for Seniors: Noodle Soup

In the colder winter months, it can be difficult to find the energy to cook. All you want is a hot meal that doesn’t involve getting up off the couch. But before you reach for the phone to order fast food, we’d like to introduce you to our easiest recipe yet: noodle soup.

Noodle soup hits the spot on those chilly days. You can make it in under 10 minutes, and it is naturally dairy-free and vegetarian. You can even make it gluten-free with just a single tweak. Our favorite part is you likely have the ingredients in your pantry already!

Ready to make some delicious and warm noodle soup? Then keep reading!

Ingredients for Noodle Soup:

  • dry pasta (any type works, we used fusilli)
  • 1 can of veggies (we recommend peas and carrots or Russian salad)
  • vegetable bouillon cubes
  • onion (diced)
  • garlic (minced)
  • Salt
  • Pepper

**You can use any can of vegetables you have on hand, but avoid corn if possible, as that lowers the nutritional value of this soup.

How to Make Noodle Soup (Step-by-Step)

Start by setting 2 quarts of water to boil on the stove.

While the water is heating up, dice the onion and mince the garlic if you didn’t buy pre-diced.

Once the water is boiling, add all three cubes of bouillon and stir until dissolved.

After the bouillon has dissolved, add the dry pasta, onion, garlic, and can of veggies. Set a timer for the amount of time specified on the pasta box.

Stir occasionally, and when there is about one minute left of cooking, add a pinch of salt and a pinch of pepper, or more, to taste.

Remove from the heat and serve—and just like that, you have a delicious and nutritious soup!

Variations of Noodle Soup

We used vegetarian bouillon to keep this soup vegetarian, however chicken bouillon works just as well, just know it won’t be quite the same as chicken noodle soup as no meat is added in the cooking process (to keep this recipe simple and easy).

That being said, you can add meat if you would like. We recommend pre-cooked deli chicken or turkey so you don’t have to worry about ensuring the meat cooks enough prior to serving.

Make this recipe gluten-free by choosing a gluten-free pasta and ensuring you have gluten-free bouillon.

Tips for Noodle Soup

  • Cook your pasta al dente: Since this recipe makes enough to feed four, if you aren’t serving four, stop cooking your pasta when it is al dente so it doesn’t get mushy.
  • Add extra bouillon: Everyone’s tastes are different. If you sample your soup and it’s too bland, add more bouillon. If the flavor is too strong, add more water.
  • The more veggies, the better: We love this soup with a can of Russian salad mix because it has a ton of veggies in one can, but you can add multiple cans of different veggies if you want to increase the veggie content.

What to Serve With Noodle Soup

Noodle soup is a great lunch on its own, but for dinner, you may want to consider serving it with some bread or crackers to make this meal a bit more filling.

How to Store Leftover Noodle Soup

Once cooled, leftover noodle soup should be placed in an airtight container and stored in the refrigerator. Consume within five days.

How to Reheat Noodle Soup

Noodle soup is super tasty, even when reheated! Simply portion out one serving of noodle soup into a bowl and microwave on high for 3-4 minutes (microwave ovens may vary).

Ingredients:

Directions:

1. Bring 2 quarts of water to a boil in a saucepan.

2. Dice onion and mince garlic.

3. Once the water is boiling, add bouillon.

4. Allow the bouillon to dissolve, and then add the pasta, onion, garlic, and can of veggies.

5. Cook the pasta following the directions on the package, stirring occasionally.

6. Once the pasta is al dente, add salt and pepper to taste.

7. Remove from heat and serve.
